Abstract

While considerable work has been done on several lipases, there has been a relatively limited amount of work done to characterize bacterial lipases, particularly the extracellular lipase elaborated by Achromobacter lipolyticum.

The present study investigated the conditions under which Achromobacter lipolyticum produced copious amounts of lipase and to characterize the lipase(s) produced by the organism.

The study was designed with the following objectives:

  1. To study the factors affecting the extracellular lipase production of Achromobacter lipolyticum.

  2. To determine the factors affecting lipase activity.

  3. To investigate the rate of hydrolysis of various substrates by the enzyme.

  4. 4. To determine whether there existed any selectivity in the release of various fatty acids from milk fat by the action of the microbial lipase.
