Abstract

Ice cream has not formed a major branch of milk industry in India until recently. However, it has been fully realized that with better appreciation of food values of ice cream, change in certain social customs, greater purchasing power of consumers, improved qualities, improved marketing methods, introduction of novelties, and large-scale production, ice cream is definitely going to take an important place among the leading dairy products in India. It has been thought desirable to take up work on ice cream manufacture with a view of being able to suggest certain means of making improvements in the present general practices of ice cream manufacture in India.
