Abstract

The objective of the current research was to compare the fatty acid patterns of serum cholesterol ester, triglyceride, free fatty acid, and phospholipid fractions exhibited by adolescent boys fed controlled low fat diets in which the sole source of dietary fat was corn oil, safflower oil or beef tallow. In addition, comparisons were made with blood serum fatty acid patterns of the adolescent boys while consuming self-selected diets over a two year period.
