Studies on the Nitrogen Metabolism of Poultry

Abstract

The earlier workers in the field of nutrition were primarily concerned with the calorific value of the various classes of feeding stuffs. The next step emphasized quantitative studies of the protein, carbohydrate, and fat in various feeding stuffs. Attempts to classify feeds from these standpoints were interfered with to some extent by the development of the present day vitamin theory. At present, considerable attention is being given to the properties of individual proteins, it having been demonstrated that the quality of a protein, as well as quantity, is an important factor in determining its nutritive value. The quality of a given protein depends upon the nature and proportion of the various amino acids of which it is composed, it having been demonstrated that certain amino acids are nutritively more important than others.
