Abstract
Seasonal Nebraska Nutrition Education Kits (SNNEAK) are a nutrition education tool used to promote how to select, store, and use seasonal, local produce with a food demonstration recipe highlighting different fruits and vegetables. The ultimate goal of SNNEAK sheets is to provide nutrition education, reinforce healthy eating behaviors, and teach food resource management skills. SNNEAK food demonstrations have been used in the following types of settings: community organizations, emergency shelters and temporary housing, healthcare clinics and hospitals, faith-based centers, congregate meal sites, senior nutrition centers, food assistance sites, food banks, food pantries, farmer’s markets (FM), and community and recreation centers. The objective of this paper is to introduce and examine the use of SNNEAK sheets in the Double Up Food Bucks (DUFB) Program. DUFB is a nutrition incentive program available to Supplemental Nutrition Assistance Program (SNAP) customers at participating Nebraska locations. This paper also describes my personal experience working with SNNEAK sheets at select DUFB sites and Nebraska Extension. Overall, SNNEAK sheets were shown to greatly help with nutrition education and bolster the DUFB program.
