Abstract

The central research question of this thesis asks: How does nutrition influence ocular health overall and the impact of nutrition on the development or progression of common eye diseases? Building upon existing research in optometry/ophthalmology, nutrition science, and public health, this project examines the physiological mechanisms linking diet to eye health and evaluates how specific nutrients and dietary patterns contribute to disease prevention and visual function. This thesis employs a comprehensive review of peer-reviewed literature to evaluate the relationship between nutrition and ocular disease. Key areas of focus include the role of oxidative stress in eye disease development, the protective effects of nutrients such as vitamin A, lutein, zeaxanthin, and omega-3 fatty acids, and the influence of dietary patterns on chronic ocular conditions. In addition to the written research component, this thesis includes a creative project in the form of a website designed for the general public. The website translates complex scientific findings into accessible content aimed to improve nutrition literacy related to eye health. Together the research and creative components highlight nutrition as a foundational strategy for preserving vision and preventing chronic ocular disease, while emphasizing the importance of effective science communication in promoting informed dietary choices for long-term ocular health.
